You can switch off the responsive component in the theme UI and it will become a standard non-responsive theme, thereby showing the fixed width version even in mobile. Then simply log back in and set it to be responsive again.

I think Adaptive theme has this setting as well, but I can't confirm as I don't have Adaptive installed on my machine at the moment, but you can certainly do this with Omega.
